Geocache Description:

This is Junior Pastamaker's ( Kayley ) first cache, but that doesn't mean it is easy! There hopefully will be a series of "Sweet Treats", so keep an eye out.

This one is an Eclipse Mint Tin covered in Dad's favourite duct tape just so it's not so blue!

Shortbread is a favourite treat in Scotland, and is eaten traditionally at New year. What do you think of it?

Ingredients

500 g/l lb butter, softened
175 g/7 oz caster sugar
600 g/1 1/4 lb plain flour, sifted ( crunchier biscuits can be made by substituting 50 g/2 oz rice flour for 50 g/2 plain flour )

Method

Preheat the oven to Mark 3/325 degrees F/160 degrees C. Beat together the butter and the sugar. Beat the flour in 100 g/4 oz at a time, until smooth. If the dough becomes to stiff to stir, knead in the rest of the flour with your hands. grease and flour a baking sheet ( or a round shortbread mould Roll out the dough and press onto baking sheet. Mark the dough into fingers or pie shaped wedges and prick the pieces with the prongs of a fork. Alternatively you could cut into individual pieces - these will cook quicker. Bake in the centre of the oven for 30 - 40 mins or until firm to the touch and delicately browned. Icing can be applied if wanted once cooled. Makes about two dozen biscuits.
