You may recognize this stop as a port we have visited before. That is true in a sense, but our January 2015 excursion was to Nigeria, where we enjoyed many spicy appetizers and were treated very well by the hosts.

If you recall, our host was a native of Nigeria, and she directed us to the authentic Nigerian cuisine on the menu. You may also recall that her husband (Sammie) is originally from Cameroon, and invited us back to sample the fare of his country. Well now is our chance.

Many staples of the Cameroonian diet came from the explorers of the New World (the Americas). The Portuguese arrived in Cameroon in 1472 and brought with them such foods as hot peppers, maize (corn), casava (a root vegetable), and tomatoes.

Other Europeans settled on the Came-roon coast in the mid 1800s, with the British arriving first, followed by the French and Germans. The French influence is reflected in the presence of some foods, such as omlets and French bread, as well as in the preparation of some dishes; however, for the most part, Cameroonians continue to prepare their own traditional foods.

What might you like to try? How about

Ndolé, a Cameroonian dish consisting of stewed nuts, ndoleh (bitter leaves indigenous to West Africa), and fish or beef. The dish may also contain shrimp or prawns. It is traditionally eaten with plantain, bobolo (a Cameroonian dish made of fermented ground manioc or cassava and wrapped in leaves)

Douala Grilled Fish: Seasoned grilled Tilapia Cameroonian style. Served with choice of white, coconut, jollof rice or fried plantains
