Geocache Description:

I love food! A Christmas morning tradition is Curt's famous raspberry, grape and banana compoté on waffles. Before I give you Curt's recipe, note that the secret is in the ingredients.

The full compoté requires fresh picked  raspberries, calmeria or concord grapes, plantains or bananas and blueberries. I'll first include the short cut recipe if you are just preparing for 1-2 people or are missing some seasonal fruit and second, the full compoté recipe.

Proportions: Short cut
3 cups raspberries
3 cups calmeria grapes
1 banana

or Curt's compoté
7 cups raspberries
6 cups calmeria grapes
4 cups blueberries
2 1/2 plantain
Preparation:
Peel the plantain and dice into 1/2" chunks. Cut the calmeria grapes in half width wise & pierce each blueberry with a fork. Wash the raspberries and leave in strainer.

Directions:
Steam the raspberries in a saucepan with a 1/2 cup of boiling water until tender. Set the temperature to simmer and mix in the plantains tell they soften. Should be around 15 minutes. The compoté will start to thicken. Immediately add the blueberries and grapes and remove from heat. Gently keep folding the ingredients together and let stand another 10 minutes. Your compoté is ready! Bon appetité!
