I have recently moved to Winnipeg from Kingston, Ontario. 

Among the many things I will miss dearly about Kingston are:

  1. all of the great puzzle caches
  2. all the fantastic Thai food

 

            I’ve already had a lot of fun attacking some of Winnipeg’s puzzles and I am on the lookout for and open to suggestions for great Thai.

 

For this cache, I’d like to share with you:

  1. my own recipe for Pad Thai
  2. a little puzzle

 

I actually got the recipe after attending a cooking class in Bangkok, but it’s so labour-intensive and dependent on specific ingredients that I have only ever gotten around to making it once; hence the name “One Time Pad Thai”

 

Recipe for One Time Pad Thai

 

First soak two hundred and fifty grams of rice noodles in cold water while you prepare the other ingredients.

Next you should heat three tablespoons of vegetable oil over low heat and add in one tablespoon each of minced garlic and shallot and fry until fragrant.

You then add fifty grams of chicken along with a third of a cup of cubed tofu and stir until cooked. 

The next step is to break an egg in and spread it in.

You should then add the noodles and season with four tablespoons of fish sauce and two tablespoons of palm sugar and two tablespoons of tamarind paste and one tablespoon of preserved turnip.

Stir it all until tender. 

You can now add a third of a cup of bean sprouts and a half a cup of spring onion and stir.

Now turn off the heat and sprinkle it with a tablespoon of ground roasted peanuts then season with a half tablespoon of dried red chilis and serve.
