Lets bake a cake
There are several travelbugs about cooking, but I could not find one about baking cakes.
The idea for this one is to share a recipe for a cake or cookie or any other sweet you like.
As this TB will start it’s journey on the 2nd geocachers meeting in Vienna I will start
with a recipe for the famous Sachertorte.

For 12 people:

130 g butter, 110 g icing sugar, 6 egg yolks,
130 g chocolate, 130 g flour, 6 egg whites,
100 g fine granulated sugar, Apricot jam,

- Beat together the butter and icing sugar
- While constantly steering gradually add in the egg yolks and the melted chocolate
- Beat the egg whites with the granulated sugar to stiff peaks and mix them into the chocolate batter. Gently fold in the flour.
- Place in a buttered tart mould and bake for 60 minutes at 180° C
- Let cool, remove from the mould, slice through the centre and fill with a layer of good apricot jam
- Glaze with chocolate

Serve the Sachertorte with whipped cream.

Limburgse Botervlaai / Kruimelvlaai

Ingrediënten voor deegbodem: 250 gram volkorenmeel (of voor wat "lichtere" vlaai 150 gram tarwebloem nemen en 100 gram volkorenmeel), 125 ml sojamelk, 50 gram oersuiker, ½ theelepel zout,50 gram margarine, ½ eetlepel boekweitmeel, ½ pakje gedroogde gist

Sojamelk verwarmen, circa 37 graden celsius. Gist met een theelepel oersuiker mengen en een beetje van de warme sojamelk toevoegen. 10 minuten laten staan tot de gist goed opgekomen is. Dan met de overige ingrediënten tot een soepel deeg verwerken. Blijven kneden tot de deegbal makkelijk van de kom loslaat en blaren gaat vormen. Deeg circa een half uur op een warme plaats laten rijzen.

Ingrediënten custardpudding: ½ liter sojamelk, 45 gram custard, 50 gram oersuiker, ½ pakje soja cuisine, 1 snufje zout

Custard, suiker en een snufje zout goed mengen met een gedeelte van de sojamelk. Resterende sojamelk aan de kook brengen. Met een garde het custardmengsel aan de sojamelk toevoegen. Op een laag vuurtje onder voortdurend roeren nog drie minuten koken, dan van het vuur nemen en de soja cuisine toevoegen. Laat het geheel een beetje afkoelen voor verdere verwerking in de vlaai.

Ingrediënten kruimels: 4 eetlepels gehakte hazelnoten, 80 gram margarine, 2 paplepels wijnsteenbakpoeder, 3 eetlepels oersuiker,1 theelepel vanillepoeder, een snufje zout, 2 eetlepels water, 200 gram volkorenmeel (of 100 gram tarwebloem en 100 gram volkorenmeel)

Noten in een droge koekenpan roosteren. Overige ingrediënten en geroosterde noten tot een kruimelig deeg verwerken.

Bereiding vlaai:
Gerezen gistdeeg uitrollen. Hiermee de bodem van een ingevette springvorm (circa 30 cm doorsnee) bekleden. Custardpudding er over verdelen. (Extra lekker is het om nog wat schijfjes appel in de pudding te drukken). Kruimeldeeg over de custardpudding verdelen. De vlaai in een voorverwarmde oven op 200 graden Celsius circa 30 minuten bakken. Na het bakken voorzichtig de rand van de springvorm halen en af laten koelen.

BASIC APPLE PIE RECIPE
8 servings

You can make the crust or you can use a premade one.

CRUST (recipe makes one double crust):

2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup cold butter, broken into small pieces
5 tbsp. cold vegetable shortening
8 tbsp. ice water

-Measure the flour, sugar and salt togetherl. Stir to combine.
-Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife. Don't over mix them.
-Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).
-Turn the dough onto a lightly floured surface, knead it together, then divide in half.
-Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.
-Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.
-Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only). Return it to the refrigerator until you are ready to make the pie.
-Add filling (see below)
-Roll out the second ball of dough and cover top. Use a fork or your fingers to pinch the edges together. cut a couple slits in the top.

FILLING

1/3 to 2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
Pinch of salt
8 medium sized apples (a medium apple = about 1 cup)
2 tablespoons margarine

-Heat oven to 425 degrees.
-Peel, core and slice the apples. Try to keep the size of the slices even.
-Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.
-Stir in apples.
-Pour into pastry-lined pie plate.
-Dot with margarine.
-Cover with top crust and seal the edges. Cut slits in the top.
-OPTIONAL: Cover edge with 3-inch strip of aluminum foil to prevent too much browning.
-Remove foil during last 15 minutes of baking.
-Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

Recept voor pepernoten

375 gram roggemeel + bloem (meer roggemeel dan bloem)
10 gram speculaaskruiden
1/2 eetlepel bakpoeder
zout
5 dl warm water
125 gram honing
75 gram stroop

alles door elkaar mengen (evt. verdunne met karnemelk)
even laten opstijgen
bloem op de plank en een dikke plak maken.
in brokken snijden en op een ingevette bakplaat leggen.
ongeveer 20 min. bij 200 graden in de oven.

Our favourite chocolate cake-recipe:

Delicious Chocolate Cake

Preparation Time: 40 minutes
Cooking Time: 60 minutes

Ingredients:

200 g butter
200 g cooking chocolate
1 ½ cups sugar
¾ cup hot water
1 cup flour
3/4 cup self-raising flour
1/2 cup baking cocoa
2 eggs

Method:

1.Preheat oven to 160°C. Grease and line a 24cm springform pan.

2.Place first four ingredients in pan, stir over low heat until sugar has dissolved and mixture is smooth, cool.

3.Fold in sifted flours, baking cocoa and eggs. Pour mixture into prepared pan.

4.Bake for 1 hour until cooked, cool completely in pan before turning out.
