Chicken Savoy was invented by "Stretch" at the Belmont
Tavern in Belleville, New Jersey. The specifics of the Belmont
Tavern's recipe are a closely guarded secret. The dish is now
served throughout the state and is widely regarded as "The State
Dish of New Jersey.

Recipe (the best of many available variations and
our favorite):
Ingredients:

prefer-all with the skin on

- Dried Oregano
- Salt and Pepper to taste

Instructions:
- Brush or rub olive oil all over the Chicken pieces and coat the
bottom of the Pan
- Place the Chicken, skin side down, in a stove proof
skillet or heavy pan - do not crowd the pan or the chicken
will not brown
- Sprinkle the chicken liberally with (in this order): Garlic,
oregano, salt, pepper, cheese
- Place the chicken in a pre-heated 500 degree Stove (if
your stove goes higher, do the highest setting) for 35 minutes. It
may be necessary to OPEN the Windows and Disconnect the Smoke
Detector!
- Remove from the stove and pour on a cup of the vinegar, the
dish should sizzle. Serve immediately with the sauce and drippings
on top. It is classically served with italian bread to sop up the
sauce. We also like it served on top of Penne pasta.
