De Verdillon continuer et rejoindre une ancienne glacière datant de 1686.
La construction de glacières daterait de 1600 en Provence.
Deux marchands Marseillais s’intéressent en 1642 aux procédés de conservation de la neige et de la glace.
Leur première glacière est située à Mimet vers la chaîne de l’étoile.
Elle entre en service en 1686.
Par la suite de très nombreuses glacières seront construites entre Vitrolles, Marseille et Mazaugues (ou se trouve la plus ancienne : 1640, cf. la cache « bien fraîche ! S.V.P… (la glacière Pivaut) by Ti’Mars »
Cette glace a aussi alors un usage médical.
Elle est vendue essentiellement dans les auberges.
C’est après 1789 que la production de glace commence à s’industrialiser.
