Facts about this molecule:
The white stuff we keep on our table is sucrose, a molecule
composed of 12 atoms of carbon, 22 atoms of hydrogen, and 11 atoms
of oxygen (C12H22O11).
Like all compounds made from these three elements, this molecule is
a carbohydrate, or more specifically the white stuff on the table
is a complex carbohydrate.
It is found naturally in most plants, but especially in specific
canes and beets.
Sucrose is actually two simpler molecules stuck together:
fructose and glucose.
Both fructose and glucose share the same chemical formula
C6H12O6. The difference is in how
the atoms are arranged in each molecule.
In recipes, a little bit of acid (for example, some lemon juice or
cream of tartar) will cause sucrose to break down into these two
components.
In your kitchen, if you look closely at the crystal you’ll notice
it comes in little cubelike shapes. These are orderly arrangements
of sucrose molecules.
