Malpeque oysters (Crassostrea virginica) were the first PEI product to be widely exported, with more than 10 million of them now harvested each year.
The Malpeque oyster was judged the world's tastiest oyster at the Paris exhibition in 1900. Over a hundred years later it continues to be recognized as one of the world's finest, known for a clean, sharp taste.
A bivalve mollusk, oysters are heavy, chalky white, and vary in shape and size according to the sea bottom. Environment Canada rears millions of Malpeque larvae, then they are cultivated in tidal bays and estuaries and planted in growing beds where they mature for 5 years.
Oysters are a very versatile seafood. In the shell, they can be baked, steamed, grilled, or used in specialty dishes such as Oysters Florentine. Shucked oysters are excellent deep-fried, sauteed, grilled, in chowders, soups, stews, pies, casseroles, stuffings, dressing, or as an appetizer or main course. The Malpeque is excellent on the half-shell, served with nothing but its own liquor. Its clarity and purity of flavour make it the connoisseur's choice.
