Baker's Wack-a-Cache

"Hey Baker Man, I had a good day caching, but I'm having the Geo-Family over for dessert tonight. What can I make?"

"Well "Wacky Cake"is always a hit at our house."

"Wacky cake, whats wacky cake?"asks the geocacher.

The Baker replies "It's a chocolate cake covered with carmel."

"That's not wacky." says the cacher.

The baker explains,"Well what makes this wacky is this cake has vinegar instead of eggs."

Cacher says,"Wow, that is wacky, How's that made?"

Baker contines,"Here is the receipt."

3 Cups of Flour
2 cups of sugar
2 tsps of baking soda
4 Tabs cocoa powder
1 tsp salt
2 cups water
3/4 cup oil
2 Tabs vinegar
2 Tabs vanilla

Instuctions
Mix dry ingrediants together. Make hole in the center. Mix all liquids together in seperate bowl. Then pour into the hole in the hole in the dry ingredients. When all dry ingredients are mixed in pour into greased and floured 13"x9" cake pan or 2- 8" cake pans.
Bake at 350 degrees for 25 to 30 minutes until knife inserted into center comes out clean. Remove and let cool.
When cool cut into serving peices and poke all over with a straw.

The Baker man continues with the carmel icing.

1 to 2 Tabs Sugar
1 can evaporated milk
1 to 1 1/2 cups sugar
1/4 lb butter
dash of salt
2 Tabs vanilla

Instructions
In a heavy skillet (We usually use cast iron or Stainless steel) put the 1 to 2 Tabs of sugar. Heat until the sugar starts to brown and foam. Turn down heat and add the evaporated milk. Bring back to a boil and add the rest of the sugar, butter, and salt. Bring to a boil stirring constantly so the milk does't scald. Turn down the heat to medium and cook until it is at the soft candy stage. (When the carmel drops off the spoon in droplets and doesn't pour in a stream it is ready). Be sure to not cook too long or it will turn to hard candy.
Pour over the cake.

This ia another family favorite from the GeoWife's Grandmother.
