Le testimonianze più antiche dell'abitato di Pitigliano risalgono al Neolitico (IV millennio a.C.).
Pitigliano fu un importante insediamento durante l'età del bronzo (II millennio a.C.) ed in epoca etrusca.
Al periodo romano si fa risalire la leggendaria origine del nome secondo la quale Pitigliano sembra derivare dall'unione dei nomi Petilio e Cigliano, due esuli etruschi che trovarono rifugio nello sperone di tufo dopo aver rubato la corona d'oro alla statua di Giove Statore in Campidoglio. Dal 385 a.C. è comunque attestata in Roma la presenza di una Gens Petilia dalla quale è più probabile la derivazione del nome Pitigliano.
L'Acquedotto Mediceo è il monumento che caratterizza maggiormente il paesaggio di Pitigliano.
L'opera fu costruita dal 1636 al 1639. Subì successivi interventi durante il 1800 quando venne realizzato il viadotto che conduce in Piazza della Repubblica dove, una scenografica fontana a cinque archi raccoglie ancora oggi le acque per uso pubblico.
Il centro storico si sviluppa lungo tre vie principali, quasi parallele, intersecate da numerosi vicoli.
Al piano terra delle case si aprono le cantine, vere protagoniste della storia economica di Pitigliano ricavate in un dedalo di gallerie scavate in epoca imprecisata.
Il dolce tipico di Pitigliano è lo sfratto.
Il nome deriva dalla comunità Ebraica e ricorda l'usanza di picchiare alla porta degli Ebrei con un bastone quando durante il periodo delle persecuzioni, venivano obbligati a lasciare le proprie case per vivere nel ghetto. Lo sfratto ha la forma allungata simile ad un bastone, contiene un ripieno composto da miele, scorze di arancio, noci, anice e noce moscata, che conferiscono un sapore dolce ed un profumo intenso.

The mythical name's origin dates back to roman period and it says that Pitigliano is the result of the union of the names Petilio & Cigliano. They were two etruscan exiles who took shelter on the tuff spur after robbing the gold crown of the Jupiter's statue in Campidoglio. In any case the presence of a Gens Petilia is attested in Rome from 385 b.C. and this is the most very likely origin of the name Pitigliano.
The Medicean Waterworks is the monument that most characterizes the landscape of Pitigliano.
The contruction was built during the Medicean period 1636 to 1639. During 1800 it underwent subsequent alteration when viaduct which leads Republic Square was built. In this square the stagy fountain with five arches gathered the waters commonly used.
The historical centre grows along three main streets, almost parallel criss-crossed by many lanes.
At the ground floor of the houses the cellars open. They are the protagonist of the Pitigliano's economic history. The cellars are made in a maze of galleries dug in unspecified period.
The typical cake of Pitigliano is the "Sfratto".
"Sfratto" means "eviction" in Italian and the honey and nut-filled sweet resembles the wooden rods used to drive the Jewish residents from their homes in early times of persecution (when they were moved into Ghettos). In happier times, the Jewish residents began to bake sweets resembling the rods, thus turning bitter memories into sweetness.
