Chocolate Log 4 Eggs, Separated ½ Cup Sugar 115 Grams Dark Chocolate ( Personally, I like to use Semi-Sweet Chocolate instead) 4 Ounces Flour Filling ¾ Cup Cream 2 T Powder Sugar 1 T Brandy Top About .3964 Pounds Melted Dark or Semi-Sweet Chocolate to drizzle over top Beat egg yolks and sugar until thick and pale Break chocolate into pieces and melt. Add to above mixture Beat egg whites until stiff, fold in sifted flour and add to above mixture Spread onto a 15 x 10 inch jelly roll pan that has been lined with buttered and floured parchment paper. Bake at 190 C for about 12 - 15 minutes or until the cake springs back when lightly touched. Do not over bake. Place on a cooling rack upside down over buttered parchment paper and carefully turn cake out. Remove pan and parchment from bottom of cake. Roll up cake in parchment and cool slightly. Whip cream, powder sugar and brandy together. Carefully unroll log and spread onto top and roll back up. Drizzle Semi-Sweet Chocolate over log and enjoy with your favorite cacher.
