Beliefs and Legends
· this herb is widely used as a garnish
· it can sweeten the breath after eating onions or garlic
· sow the seed after the sun has warmed the soil, then water with boiling water - this will soften the hard outer casing and aid germination
· if the seeds are sown on Good Friday they will bring happiness and good fortune
· if this herb is planted around the onion bed it will keep away the onion fly
· if this herb is thrown into a fish pond, it will cure sick fish
Petroselinum Crispum is a bright green perennial herb. It contains three times as much Vitamin C as oranges, twice as much iron as spinach, is rich in Vitamin A and contains folate, potassium and calcium. It is also recognised for its cancer-fighting potential.

Recipes
Parsley Butter
For grills, fish and baked jacket potatoes -soften 125grams butter with a fork and work into it a few drops of lemon juice and 3 teaspoons of fresh or 2 teaspoons of dried parsley. Spread on a saucer and place in the refrigerator to harden. Shape into small pats and serve on a plate or place pats on the food just before serving it.
Parsley and Lemon Stuffing
100 grams breadcrumbs
1½ tablespoons chopped parsley
60 grams butter
1 tablespoon chopped thyme
1 tablespoon finely chopped onion
1 dessertspoon chopped marjoram
Grated rind and juice of one lemon
1 egg
Salt and pepper
Soften the onion in the butter without browning. Put all the ingredients (with the onion) in a bowl, binding them together with the egg. Stuff the neck end of a chicken or turkey.
