Geocache Description:

Come see the Galilee commercial fishing and lobster fleet and watch fisherman unload their catch. Galilee is one of the largest fishing ports on the Eastern seaboard. Easy walk from Block Island Ferry or Salty Brine State Beach with great views up and down Salt Pond. If you are looking for dinner come and buy fresh lobsters off the boats. Parking is readily available.

Now if you do buy lobsters (our favorite boat is Diversion readily visible from this cache if in port) and would like to try something other than basic steaming, below is a fantastic recipe for baked stuffed lobster. My mouth is watering just thinking about it.

Bake Stuffed Lobster Recipe

4 (1.5lb) lobsters
8TB butter
3TB butter for brushing
1 medium onion (shallots are great too)
2 sprigs tarragon coarsely chopped (2TB)
2 springs parsley coarsely chopped (2TB)
4 oz peeled raw shrimp scallops , cooked crabmeat (my favorite) OR lobster chopped
Kosher salt and pepper
3 oz Ritz crackers (the best) OR oyster crackers, OR dried corn bread crumbled

Directions: Preheat oven to 425
Melt 8 TB butter in a skillet over medium heat. Add onion and cook 5 minutes until soft. Stir in tarragon and parsley and raw shrimp or scallops cook for 1 minute. Remove from heat and cool. If using cooked crabmeat or lobster add now. Season with salt and pepper. Add crackers just before stuffing lobsters.

The part my husband gets to do: We put lobsters in freezer for 15 minutes, then using a chef's knife split the lobster open lengthwise removing sac and intestines. Remove tomally and roe and add to above stuffing mixture if desired (I do). With back side of knife (my husband uses a hammer) crack the top side of each claw. Place lobsters on cookie sheet and stuff the pocket loosely with above mixture, brush each with butter. Bake until lobster is cooked thoroughly, 17min for 1.5lb OR 24 for 2.0 lb lobsters.

Serve with clarified (optional) butter. ENJOY!
