Gravy:
Krisscop highly advocates NOT using CANNED GRAVY. Gordon food service has a respectable gravy package that you can use with water and/or pan drippings.
Some make gravy using ROUX...put flour in the pan and brown it with the pan drippings then add stock or water.
The brown pits in the bottom of the cooking pan are VITAL to good gravy. The better the meat, the better the gravy.
make LOTS of gravy as it is vital to a good leftover plate.
