Cachaça [ka'shasa] is a liquor made from fermented sugarcane. It is the most popular distilled alcoholic beverage in Brazil. It is also known as aguardente (aguardiente), pinga, caninha or other names. Cachaça is mostly produced in Brazil, where, according to 2007 figures, 1.5 billion liters (390 million gallons) are consumed annually, compared with 15 million liters (4.0 million gallons) outside the country. It is typically between 38% and 54% alcohol by volume. When it is homemade it can be as strong as the distiller wants. Up to six grams per liter of sugar may be added." The major difference between cachaça and rum is that rum is usually made from molasses, a by-product from refineries that boil the cane juice to extract as much sugar crystals as possible. And cachaça is made from fresh sugarcane juice that's fermented and distilled.

Figures from 2003 indicate 1.3 billion liters of cachaça are produced each year though only 1% of this production is exported (mainly to Germany). Outside Brazil, cachaça is used almost exclusively as an ingredient in tropical drinks, with the caipirinha being the most famous cocktail.

In this area, there are many good restaurants, and it is a good area for finding good places to eat. It is also possible to taste the brasilian apéritif "caipirinha".

A cachaça, pinga, ou canha (no Rio Grande do Sul) é o nome dado à aguardente de cana, uma bebida alcoólica tipicamente brasileira. Seu nome pode ter sido originado da velha língua ibérica – cachaza – significando vinho de borra, um vinho inferior bebido em Portugal e Espanha, ou ainda, de "cachaço", o porco, e seu feminino "cachaça", a porca. Isso porque a carne dos porcos selvagens, encontrados nas matas do Nordeste – os chamados caititus – era muito dura e a cachaça era usada para amolecê-la.

É obtida com fermentação da garapa de cana-de-açúcar. Já a fermentação do melaço dá origem a aguardente.

A cana-de-açúcar, elemento básico para a obtenção, através da fermentação, de vários tipos de álcool, entre eles o etílico. É uma planta pertencente à família das gramíneas (Saccharum officinarum) originária da Ásia, onde teve registrado seu cultivo desde os tempos mais remotos da história.

Nesta área, há muitos bons restaurantes, e é uma boa área para encontrar bons lugares para comer. Também é possível saborear o brasileiro aperitivo "caipirinha".
