Die Salzgewinnung ist von den meisten Zivilisationen des Altertums bezeugt. Es ist jedoch anzunehmen, dass das Speisesalz auch schon früher einen Platz in der Kultur der Menschen hatte. Schon die Sumerer und Babylonier nutzten Salze zur Konservierung von Lebensmitteln.Es war überall begehrt und in bestimmten Regionen rar. Durch Speisesalz wurden viele Städte zu reichen Metropolen. So war Lüneburg primärer Salzlieferant der Hanse und wohlhabend und einflussreich. Wie wertvoll Speisesalz war, ergibt sich aus der Bezeichnung „weißes Gold“. Das Wort „Salär“ entstammt der Zahlung von Lohn oder Sold in Form von Salz.Im Mittelalter und in noch späterer Zeit mussten für Salz meistens hohe Summen bezahlt werden, so dass sich Bauern trotz eigener Schlachtung Fleischmahlzeiten nur selten und nur in Maßen leisten konnten, weil dafür Salz zum Pökeln nötig war. Im deutschsprachigen Raum wurde Speisesalz erst erschwinglich, als man die mehrere hundert Meter dicken, 250 Millionen Jahre alten Salzschichten des Zechsteinmeers in Norddeutschland abbauen konnte.

Es dauert ca. 30 - 40 Jahre bis, die Steinwände so dicht werden, dass sie durch frischen Schwarzdorn ersetzt werden müssen.

Die Bad Rothenfelder Gradierwerke werden seit der Schließung des Rothenfelder Salzwerkes in 1969 als Freiluft-Inhalatiorien genutzt. In 1989 stürzte ein Teil des Alten Gradierwerkes ein. Erst 7 Jahre nach dem Einsturz wurde ein Totalabriss und Wiederaufbau dieses Denkmals realisiert. Möglich war es nur durch zahlreiche Spenden, Fördermittel und viel Privatinitiative.

The Bad Rothenfelder graduation have been used for the closure of Rothenfelder salt plant in 1969 as an open-air Inhalatiorien. In 1989, collapsed in one part of the old salt works. Only 7 years after the collapse was a total demolition and reconstruction of this monument realized. It was only possible by numerous donations, grants and much private initiative.

Bei den Indianern Südamerikas und auch in einigen Regionen West- und Zentralafrikas wird ein salzhaltiges Produkt durch Auswaschen von Pflanzenasche gewonnen. Dieses Produkt enthält größere Anteile von Kaliumchlorid.
In Südamerika und Westafrika um den Tschadsee wird salzhaltige Erde ausgewaschen, filtriert und eingekocht. Dieses Verfahren wird auch in Thailand und in Neuguinea genutzt.
An der Nordseeküste, in den Niederlanden, Norddeutschland und Dänemark wurde Torf gefunden, der von Meerwasser überflutet war. Dieser wurde ausgewaschen und filtriert, die konzentrierte Sole wurde in Siedepfannen eingeengt. Dies gab den Halligen ihren Namen, von althochdeutsch „Hall“ = „Salz“. Das Verfahren ist seit dem Mittelalter belegt, wird aber nur noch auf Læsø (Dänemark) als Touristenattraktion vorgeführt.
Das im westafrikanischen Karawanenhandel des 17. und 18. Jahrhunderts verbreitete Salz wurde vor allem aus salzigem Brunnenwasser in der Sahara gewonnen.
