Sandymount Creamery was constructed on the gravity system, each floor of the factory being on a lower level than the one before, thus aiding the flow through the various processes. The essentials of the plant and furnishings were the steam boiler and engine, beam scales a 250 gallon receiving vat, a pasteuriser, a cream separator, a cream cooler, a ripening vat, a 400lb churn, a 6ft diameter butter-worker, a 200 gallon skim milk vat, tanks for hot and cold water, a Babcock tester, and possibly the most expensive item a refrigerating machine.
Info from: Otago Peninsula. By Hardwick Knight.
