msiporin started this series with the cache GC33EQY and I offered to add to it. Matthew created it in honor of all those who currently have diabetes (including his own wife, who was diagnosed with type-1 diabetes at 16 months old), to those that have had diabetes, and in memory of those that have passed due to complications from diabetes. The containers being used are well known to diabetics: Test Strip Canisters. He encourages anyone to contact him if you're interested in adding to the series.

I decided to add my own spin on this, since in addition to my geocaching hobby, I love to cook and bake. I used to work with a man who has diabetes, and he loved my banana bread. Although this is not my delicious bread recipe, it is a dessert that I intend to make. It is a diabetic recipe.

Dolce Pesca (Sweet Peaches)

Ingredients

4 fresh figs

1/2 cup pine nuts

4 peaches, halved and pitted

1/4 cup white sugar

1 cup white wine

1/2 cup brandy

Directions

Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with foil.

Place the figs and pine nuts in the bowl of a food processor and pulse until fine. Place the halved peaches onto the prepared baking sheet, cut side up. Sprinkle evenly with the white sugar. Pour the white wine over the peaches, and stuff them with the fig mixture. Pour the brandy over the peaches.

Bake in the preheated oven until browned, about 15 minutes.
