You may find the cache and sign the logbook at any time. However, to log it online, you must have found caches with FIFTY or more Favorite Points (only able to be assigned by Premium/Charter members) that TOTAL 2,000 or more favorite points combined.
You may include a list (easiest) or create a bookmark list (hardest), or simply reference your profile (I can find it).
Project-gc.com even has an easy tool to use to do the hard calculations for you....then you can simply cut-n-paste their report into your log!
