Verder in de voetsporen van de Romeinse legers over de Via Mansurisca, de heirbaan zoals men denkt dat die tussen Maastricht, De Planck, Limbourg a/d Vesdre en Trier heeft gelopen. Duik in de kennis van slakken, het kweken en de culinaire plaats die de slak inneemt.

We continue following the old Roman road between Maastricht, De Planck, Limbourg sur Vesdre and Trier. And you will learn about snail farming and the culinary experience with a special type of snail.

When in Rome do as the Romans


Bent u met de auto dan is het beste, om goed bij de cach te komen, eerst te parkeren bij de Héribertus Kerk in Remersdaal. Van daar uit is het maar even lopen. Op de smalle weggetjes kan men gemakkelijk tussen een kudde koeien terecht komen of volledig gehinderd door een grote tractor.
Met de fiets is het geen probleem.

De Romeinen hebben een belangrijke culinaire rol gespeeld in het verleden.
Tijdens hun veld  tochten langs de kusten van Afrika en Spanje brachten de Romeinen grote hoeveelheden slakken mee terug naar Rome. De slakken werden beschouwd als een delicatesse, met afrodisiaca- en medicinale krachten.
Voordat de slakken geconsumeerd kon worden echter, werden ze voorbereid in een afgeschermd slakken veld: het Cochlearium  . Een kleine gracht rondom  was er om de beestjes  niet te laten ontsnappen. Ze werden hier nog eens extra vet gemest  door ze bij te voeren  met smaakmakende kruiden en melk.

De slakken werden gegeten. Een lekkernij en ook nog biologisch voedzaam!
Aan de bereiding van slakken vergt nogal wat aandacht. Er zijn vele recepten waarvan een eerste is te vinden in een uniek kookboek uit de oudheid: de  Apicius  “re coquinaria”  . Ook de  slakken krijgen hier aandacht.

Tijdens hun tochten naar het noorden hebben de Romeinen de “slakken culinaria” ook in de noordelijke streken geïntroduceerd.
In de volksmond worden er veel namen gegeven aan een grote eetbare slak: "Helix Pomatia", "Wijngaardslak" , "Roman Snail", "Apple Snail", "Lunar", "La Vignaiola", "Weinbergschnecke", "Escargot de Bourgogne", "Burgundy Snail", "Gros Blanc", en welke nog meer?

De Wijngaard Slak is in Nederland, België en en vele andere landen beschermd! Niet aankomen dus!


Om toch te kunnen genieten van een culinair uitstapje worden tegenwoordig in landelijke slakken kwekerijen, zoals de Escargotière Saint Heribert,  voornamelijk de Petit Gris en de Gros Gris voor consumptie gekweekt.

When by car it is best to park first in front of the Héribert Church in  Remersdaal. From there is it only a small stroll to search for the cach. The narrow roads clog up with herds of cows or are sometimes completely obstructed by a large tractors.
When by bike you will have no problems...

The Romans had an important role in the culinary past. During their galleys trips along the coasts of Africa and Spain, the Romans brought large quantities of snails back to Rome. The snails were considered a delicacy, with afrodisiac and medicinal powers.
Before the snails could be consumed, however, they were kept in a shielded snail field: the Cochlearium. A small ditch surrounding the place so the animals could not escape. They were here even further fattened by feedeng them spices and milk.

The snails were of course eaten. A delicacy, and biologically nutritious!
Preparing snals for consumption requires a lot of attention. There are many recipes of which a first one ever is found in a unique cookbook from the past: the Apicius “ re coquinaria ". Also here the snail is given attention.

During their trips to the north, the Romans introduced. the "Snails Culinaria" in the northern regions.
In the vernacular, there are many names given to a large edible snail: "Helix Pomatia", "Wijngaardslak", "Roman Snail", "Apple Snail", "Lunar", "La Vignaiola", "Weinbergschnecke", "Escargot de Bourgogne", "Burgundy Snail", "Gros Blanc" , and what else more?

The Helix Pomatia is in the Netherlands, Belgium and many other countries a protected species! Have respect and do not touch!
