The 18th century bakers of petits fours were fuel efficiency pioneers! They were baked during the cooling period of coal-powered brick ovens. Their name translates to "small oven".
Petits fours come in different types. Petits fours sec are delicate bisquits, baked meringues, puff pastries and macarons. Petits fours glacés are small cakes covered in icing or fondant, tartlets or small éclairs.
