We were originally under the impression that this site was that of a Roman Olive Press, however, we have now found that it is in fact a Medieval Sugar Mill, consequently the cache name has been changed from 'Elies Mill' to Zachary's Mill (both names being a play on the Greek words for Olive and Sugar). The website www.kouklia.org.cy simply tells us that ‘The sugar-mill provides evidence of the production of sugar in the area. It is situated at ‘Stavros’, where the Lusignians chose to build the sugar-cane processing factory. The sugar-mill was used from the end of the 13th century until the end of the 16th century.’ After visiting the site and logging his find, fellow cacher Pseacraft contacted us with his ideas on the location and gave us a website to explore: http://www.florilegium.org/files/FOOD-SWEETS/Cypriot-Sugr-art.html. From here, we can see that this was most definitely a sugar mill of the Lusignian period, probably owned by the Royal family, and the remains are some of the most important in the Levant. This site contains lots of very interesting information about the sugar industry in the area, along with many technical details. If you are caching with children please take care, as some of the excavations are deep and unprotected.  As always in Cyprus, please be aware of snakes and always bring drinking water with you.
