Recipe Poffertjes

Ingredients:

• 100 gram flour
• 100 gram buckwheat flour
•  400 ml tepid milk or water
• 1 egg
• 1 teaspoon (5 gram) dried yeast or 20 gram fresh yeast
• 0,5 teaspoon salt
• 50 gram melted butter
• 1 tablespoon syrup

    
Preparation:

•  When using fresh yeast: dissolve the yeast in a little milk. Dried yeast can be mixed directly into the flour.
• Put the salt in a mixing bowl. Sieve the flour into the mixing bowl and make a hole in the middle; pour in the milk/yeast mixture or put the dried yeast into it.
• Add, stirring from the middle, little by little, the rest of the milk. At the end, also add the egg, butter and syrup. Make sure everything is well mixed without lumps.
• Cover the mixing bowl with a clean dish towel and let the mixture rest at a warm place for 45 minutes.
• Put the poffetjespan on high heat and wait till it’s burning hot. Grease the pan with butter or other liquid grease, the easiest way is with a kitchen brush. Poor a little bit of the mixture in every hole (about three quarters full).
• Turn the heat to medium and bake the poffertjes till the middle is almost solid, they let themselves off easily. Turn them around and wait till this side is golden brown.

 
Serving tip:

•  Put some cream butter on the plate, cover it with the warm poffertjes and sprinkle it with powdered sugar
• Cover the warm poffertjes with syrup
• Cover the warm poffertjes with chocolate sauce
