The fennel plant is native to mediterranean countries, but will grow just about anywhere, and is used in many different cuisines. It has the aroma of  aniseed. The leaves, stems and seeds of Fennel are all used in the culinary world. The stems are eaten raw as in a salad, or cooked as a vegetable. The leaves and seeds go well with fish, especially oily fish, and the seeds are often used in stir fry and rice dishes. My favorite use of fennel seed however is in ITALIAN SAUSAGE.  Fennel is the primary flavor component in Italian sausage. Some people might find it annoying when those little seeds get stuck in their teeth. I however, hunt them down as I'm chewing so I can savor the flavor.Mmmmm. love it.
