Geocache Description:


Biscotti also known as cantuccini is a twice baked biscuit originating from Prato. They are best served as a after dinner delight accompanied with a warm cup of coffee or dipped into Vin Santo.

Italian being my heritage (from Sicily) I decided to not only place a "little treat" but share a Biscotti recipe.

CHOCOLATE ALMOND BISCOTTI

Ingredients
♥ 2 cups of flour
♥ 1 cup of sugar
♥ 2 pinches of salt
♥ 1 teaspoon baking soda
♥ 5 tablespoons cocoa powder
♥ 2 eggs
♥ 2 egg whites
♥ 1 teaspoon vanilla extract
♥ 1/3 cup choc chips
♥ 1/2 cup toasted almonds

Method
1.  In a mixing bowl blend flour, sugar, salt, baking soda and cocoa powder
2.  In a separate bowl blend the eggs, egg whites and vanilla extract
3.  Add the egg mixture to the flour mix
4.  Add the almonds and choc chips to the mix and continue mixing until all has blended in
5. On a well floured surface roll your mix into 2 log shapes.  Like the shape of Panini bread. Which should be about 5-6cm in diameter
6.  Place on a well greased oven sheet pan and brush the top with a beaten egg
7.  Bake at 220 degrees for about 35 minutes or until light golden brown
8. Remove and let it cool for about 10 minutes and slice up the loaves
9.  Place the slices back onto a well greased oven sheet pan and bake again on 220 degrees for another 15-20 minutes
