Every Thanksgiving, one of my sons takes on the job of making the pumpkin pies. He loves making pumpkin pies and to this day, he is the official pumpkin pie baker. Several weeks before the big day, he reminds me to get all of the ingredients. The kids were have early release from school the day before Thanksgiving, so after he arrived home from school, he started on the pie making. He would bake pie after pie. One year, he made 18 pumpkin pies, one for each person attending that Thanksgiving meal!
Tim's Pumpkin Pie
2 eggs, slightly beaten
16-oz can solid packed pumpkin
3/4 cup sugar
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
13-oz can evaporated milk
9-inch unbaked pie shell with high fluted edge (or 2 frozen pie shells)
Mix the filling ingredients in the order given.
Pour into pie shell.
Bake in a preheated 425°F oven for 15 minutes.
Reduce temperatures to 350°F for 45 minutes,
or until knife inserted in center of pie filling comes out clean.
Cool. Garnish with whipped cream, if desired.
