Ever wonder how Swiss cheese gets its holes?
Turns out that hay causes the holes in Swiss cheese! Hay particles cause a weakness in the cheese structure which allows gas to form air bubbles resulting in holes. As cheese making has gotten more sanitary throughout the years, the holes in Swiss cheese have gotten smaller. Cheese makers can control the size of the holes through temperature, acidity and time.
