Throughout this series, I'll be posting recipes of different pies, which you will use to help you find the cache and bake a delicious dessert.

SeaRhino's Not Yo Grandmama's Meringue Pie:

Ingredients:

~14 ounces of sweetened condensed milk
~4 eggs, whites and yolks separated (you can toss one of the yolks)
~1/2 cup of strained blood orange juice
~2 teaspoons blood orange zest (optional)
~1/4 teaspoon cream of tartar
~2/3 cup of white sugar
~2 teaspoons unstrained blood orange juice

Instructions:

1) Preheat oven to 325 degrees Fahrenheit.

2) Prepare the pie crust. You can use a regular store bought dough crust, or make your own. I went with a thin homemade graham cracker crust. I also think it might go well with a thin shortbread cookie crust. Again, I hate making dough pie crust. If it'still a graham cracker or cookie crust like mine, place the pie crust in the oven while mixing the filling (no more than 5 minutes.) If it's a dough one, leave out on the counter until needed.

3) Mix together the strained blood orange juice, the 3 egg yolks, zest if used, and the sweetened condensed milk. It will be a little thick. Pour into the pie crust.

4) Bake in the oven for 25 minutes.

5) Around 5 minutes before the timer goes off, beat the egg whites and cream of tartar together with an electric mixer. Do this on high speed until it is foamy. Slowly add the sugar and beat until the meringue can form hard peaks. Mix in the unstrained blood orange juice and beat for about 30 more seconds.

6) When the timer goes off, pull out the pie and increase the oven temperature to 350 degrees Fahrenheit. Spread the meringue on top of the pie, making sure every spot of filling is covered. Dab the meringue to form peaks across the top. They will make the meringue look even more delicious.

7) Bake the pie for another 15 minutes to set the filling and cook the meringue. Once done, the meringue should have a nice brownish hue and should be spongy.

8) Let the pie sit out for about an hour to cool to room temperature. Store it in the refrigerator. Enjoy!
