La Bonnette a creusé au fil des millénaires une vallée encaissée, sur 20 kms, pour rejoindre la rivière Aveyron, à St Antonin-Noble-Val. Plus de 40 anciens moulins à eau y sont inventoriés, en comptant les ruisseaux affluents et notamment le Livron avec ses 12 Moulins (la plupart abandonnés !), dont 10 superposés en 100 m, ce qui en fait la plus grande concentration de moulins en Europe... Au fil des Siècles, ces nombreux moulins ont écrasé du blé, du maïs, de l'orge, de l'avoine, des châtaignes... et même pour certains des phosphates à la fin du XIXe.
La commune de Loze peut s'enorgueillir d'avoir 8 Moulins à eau plus une mouline, sur 2 Kms, ce qui est d'autant plus étonnant qu'ils se trouvent presqu'à la source de la Bonnette et que le débit y est très faible...
Une plausible explication : au XIXe, le Quercy était réputé pour la qualité de son blé notamment pour la marine marchande; or la Bonnette est le plus proche cours d'eau du Causse en descendant vers Bordeaux...
En tout cas, ces monumentales bâtisses témoignent de la richesse de l'époque et si, aujourd'hui, leur activité a cessé, elles représentent un patrimoine architectural remarquable.
La ferme est une petite exploitation à taille humaine : par sa surface agricole de moins de 20 Ha, de prés, landes et bois, utilisés exclusivement pour le pâturage les 40 chèvres et tout le matériel d'exploitation.
Les aménagements de la chèvrerie et surtout de la fromagerie pour la mise aux normes consume, ont été réalisés en grande partie par nous-mêmes.

La Bonnette heeft gedurende duizenden jaren een vallei uitgesneden die op ongeveer 20 km de rivier de Aveyron bereikt bij St Antonin-Noble-Val. Meer dan 40 voormalige watermolens zijn er geïnventariseerd, het tellen van de zijrivier stromen met inbegrip van de Livron met zijn 12 dorpen (de meeste verlaten!), Waarvan 10 stuks binnen 100 m, waardoor het de grootste concentratie van molens is in Europa ... De stad Loze is er trots op 8 Watermolens plus een mouline, ongeveer 2 km, dat is des te verrassender dat ze bijna allen kort na de bron staan. De snelheid is daar zeer laag ...
Een plausibele verklaring: In de negentiende eeuw, werd Quercy bekend om de kwaliteit van de tarwe met inbegrip van de scheepvaart; Gold Bonnette ligt het dichtst bij de rivieren van het plateau naar beneden, naar Bordeaux ...
In ieder geval, deze monumentale gebouwen getuigen van de rijkdom uit vroegere tijd en als vandaag de dag hun activiteiten wordt gestaakt, vertegenwoordigen ze het opmerkelijke architecturale erfgoed.
Over de weg een kleine boerderij op menselijke schaal: In oppervlakte cultuurgrond van minder dan 20 ha, weiden, heidevelden en bossen, die uitsluitend worden gebruikt voor begrazing van 40 geiten. De faciliteiten van de geitenboerderij dienen vooral om de kaas aan de consumptienormen te laten voldoen. De werkzaamheden worden grotendeels door de familie zelf uitgevoerd.
