The name Brin d'Amour translates in English to “bit of love” and this cheese is native to the Mediterranean island of Corsica. It is a small artisanal herb-incrusted square or nest-shaped natural rind cheese. It is typically made from raw sheep’s milk and coated with wild herbs from the rugged countryside of Corsica such bay, rosemary, savory and thyme.
