So, in recognition of the publication of The Oxford Companion to Cheese, I thought I would create a series of caches that pay homage to the fromage. The Companion only lists 244 of over 1400 known cheese styles but has over 850 total entries about all things cheese, from confocal microscopy to cheesemaker’s lung to Monty Python’s Cheese Shop skit
Domiati is a soft fresh cheese made primarily in Egypt but found throughout the Arabic nations of the Middle East. It is named after the port city of Damietta in Egypt and the first recording making of Domiati was around 332 B.C. It is usually made from buffalo milk and is unique in that salt is added to the milk before renneting, essentially picking the cheese.
