This is an enormously popular Dutch cheese shares its name with a long-running cheese market in the north of Holland. Currently it is found in two iterations – the round raw-mil chees from traditional farmhouse dairies in Holland, and the rubbery-textured industrial imitation, which can be found in countries all over the world in various forms as it is not name protected.
