The Cheese Series has made a reappearance for SCAR XI with some well-known and some more obscure varieties. Next year we might have to match some good vino with all this yummy cheese.
While this might sound like your great aunt from Newfoundland, it is in fact a cheese produced by The Tillamook County Creamery Association (TCAA) in Tillamook, Oregon. The company is known primarily for its Cheddar cheese but also produces other styles of cheese including Monterrey Jack and Colby. The TCAA was kickstarted by the hiring of famed Canadian born cheesemaker Peter McIntosh who is credited with introducing the first reliable Cheddar cheese recipe to the area’s dairy farmers.
