Parmiagiano Reggiano is often referred to as “the king of cheeses” and is among Italy’s greatest gastronomic products and a major export. Nearly 35 percent of the roughly 3.3 million wheels made each year are sold abroad. Written references to the cheese type date back to Roma times and Benedictine and Cistercian monks made variations of it in the Middle Ages. Contrary to a popular misconception, “Parmesan” is not an Anglicization but rather a French contraction of “Parmesano”.
