Mango madness - Spiced Mangoes
During the ‘build up’, prior to the on set of the wet season - many locals in the Top End experience Mango Madness and go a little ‘troppo’! This series is dedicated to the fruit that gives this time of year its name.
The Mango Madness series is not designed to be difficult and all caches are along the Stuart Highway or fairly close to it. You can drive up to them all and there is safe parking at each one.
At some of the caches (those with an # in the name) you will find a letter and a number. Collect these to find the Unknown Cache GC7TEC4-
This Mango Madness series is designed to be done traveling north from Adelaide River to Darwin with the Working for the Man series on the south bound side of the Stuart Highway.
Each cache includes a recipe to encourage you to enjoy one of the best fruits you’ll ever taste!
Spiced Mangoes
Peel and thinly slice green mangoes.
Put into jars and cover with whole spiced vinegar.
Store in fridge.
Excellent sambal for curry or steak.
