Qui è possibile vedere diversi esempi di metato, ora non più funzionanti, come quello a N 43° 56.565' E 010° 40.702'.
Il metato è un piccolo edificio in pietra destinato all’essiccazione delle castagne.
Come puoi vedere i boschi della zona sono prevalentemente costituiti da castagni.
Nella parte inferiore del metato si manteneva acceso un debole fuoco con legna di castagno. La legna doveva essere necessariamente di castagno, altrimenti le castagne avrebbero preso un sapore diverso o addirittura sgradevole.
Il fuoco bruciava senza fiamma per circa 45 giorni.
Nella parte superiore, su un graticcio si mettevano le castagne, che venivano periodicamente rigirate per farle seccare in modo omogeneo: questa era un’operazione molto delicata e laboriosa eseguita dagli anziani esperti.
Come si capiva quando le castagne erano essicate? Toccando l'architrave della porta di carico (quella del piano superiore): se era umida le castagne dovevano seccare ancora, mentre se era asciutta si procedeva con un nuovo carico.

Here it is possible to see some examples of metato, now no longer working, as the one at N 43° 56.565' E 010° 40.702'.
The metato is a small stone building where chestnuts were dried.
As you can see, in the woods around this area there are many chestnut trees.
In the lower part of the metato, a weak fire was kept on using only chestnut firewood, otherwise the chestnuts would have taken a different or even an unpleasant taste. This fire burnt without flame for about 45 days.
In the upper part of the building the chestnuts were placed on a trellis and they were periodically turned over to dry uniformly: this was a very delicate operation made by the elderly experts.
How was it possible to understand when the chestnuts were dried? Simply touching the lintel of the loading door (on the upper floor): if it was wet the chestnuts still had to dry, if it was dry a new load of chestnuts could be done.
