Along the Broxburn path there is a long Hawthorn hedge. It's an excellent source of food for wildlife and humans. In spring when the leaves are fresh you can pick them and put them in a sandwich or salad. You can do the same with the flowers. The berries make a really 8beautiful liqueur see below for the recipe.
Add 100gm of Hawthorn berries slightly crushed to half a litre of brandy ; tighten bottle leave in the dark for 20 days shaking every 3 or 4 days. Then filter through several layers of muslin.
Mix 100ml water and 150gm sugar in a pan. Bring the mixture to a boil and let it simmer for 5 minutes, skim off any foam. Cool to room temperature.
Add to the brandy Hawthorn mix it may need further filtering.
Close bottle tightly leave for a week then taste. Will keep for up to 3 years in closed bottle.
