The coffee bean is the pit of a seed of the coffee plant. This seed is actually a fruit and not a bean at all. The fruit is red or purple and often called a cherry. The fruit contains two pits with the flat side together. A single pit cherry called a “peaberry” occurs 10 to 15% of the time.
