Spanish food history may be among the most varied and interesting in the world. Since before the Romans the Iberian Peninsula has received influence from many cultures and regions and its gastronomy has evolved along with each century, each invasion and each conquest. Even today, Spanish cuisine is still evolving and continues to be one of the forerunners in the promotion of the healthy Mediterranean diet.
Spanish cuisine is heavily influenced by historical processes that shaped local culture and society in some of Europe's Iberian Peninsula territories. Geography and climate had great influence on cooking methods and available ingredients. These cooking methods and ingredients are still present in the gastronomy of the various regions that make up Spain. Spanish cuisine derives from a complex history where invasions and conquests of Spain have modified traditions which made new ingredients available. Thus, the current and old cuisine of Spain incorporates old and new traditions.
Along with its obvious historical impact, Christopher Columbus' famous 1492 voyage and the exploration of the Americas resulted in the addition of more important elements to the history of Spanish food. As of 1520, foods from the new lands arrived in Spain and immediately began to integrate themselves into the Spanish diet. Amongst the many products that crossed the Atlantic and arrived on Spanish turf, tomatoes, vanilla, chocolate, various beans, and potatoes - which surprisingly arrived in Spain before arriving in Ireland - are all staples of today's Spanish kitchen.
Spanish cuisine includes many delicious dishes, including:
- Bocadillos - a sandwich made with Spanish bread
- Carnes - Meat dishes
- Ensaladas - Spanish salads
- Mariscos - Seafood dishes
- Pescados - fish dishes
- Paella - a rice-based dish that can include chicken and/or seafood
- Tapas- appetizer or snack

This third generation restaurant is known for its homemade red/white Spanish sangria, fresh bread and its seafood and beef, but there are other options on the menu as well. The house specialty is Camarones (shrimp) in a white wine sauce. To top the night off, there are a variety of Postres (desserts) to pick from!
