The title refers to the "uniforms" of the opposing armies at the Battle of the Boyne at the nearby location. The motley crews on either side had no consistent uniforms and were identified only by sprigs of green in their hats (Williamites) and pieces of white paper (Jacobites). It's a little ironic that the men who wore green at the Battle of the Boyne were the army of William of Orange.
