ESP:  En la Comarca de Somontano de Barbastro se cultivan hasta 19 variedades distintas de olivo siendo las tres variedades más importantes la Verdana, el Empeltre y la Alquezrana.

Durante la antigüedad ningún árbol fue tan útil, tan valioso, ni tan venerado como el olivo. Símbolo de la fertilidad, la belleza y la paz, prestaba sus ramas para la coronación de los vencedores en juegos pacíficos y en sangrientas guerras. Luz, medicamento, ungüento ritual, perfume, lubricante, constituía un alimento indispensable y el culto a los muertos era inimaginables sin él. El origen de su cultivo se pierde en el tiempo y su expansión se confunde con la de las civilizaciones mediterráneas.

Las almazaras que se repartían por todo el territorio testimonian la riqueza que el olivar ha proporcionado tradicionalmente a los habitantes del Somontano. En un tiempo hubo hasta 18 molinos lo que da idea de lo extendida que estaba la producción. Actualmente quedan cinco almazaras de tipo industrial y tres que mantienen el sistema de molienda tradicional. Vale la pena visitar el Torno de Buera, a unos pocos quilómetros, para entender y ver funiconar una vieja almazara.

En el municipio de Colungo predominan las variedades Alquezrana (que aquí recibe el nombre de “Manzanilla”), Neral, Mochuto y Pansereña. En Asque existe una varieda única llamada Royeta de Asque.

Il existe actuellement cinq huileries de type industriel et trois qui maintiennent le système de broyage traditionnel. Nous vous conseillons de visiter le Torno de Buera, à quelques kilomètres de Colungo, pour comprendre et voir fonctionner un ancien moulin à huile.
