Geocache Description:

Another in a series:

I met MSmit002 while attempting to find a multi she adopted that everyone needs help with.  She knows this and is/was very helpful to all who attempt it.  Since then we've gone on many caching adventures together all over the state and also have fun at our own homes trying to figure out puzzles together while critiquing many different kinds of alcohol.

She's currently working on  her mystery a day calendar so I figured I'd throw her a bone with this easy find since winter is coming and we all have various calendar-based needs.

As Old as Time

Humans are an innovative species. Humans ingest foods and beverages that in one area of the world may seem splendid and spectacular. Perhaps even a delicacy.  In another part of the world this delicacy may be considered grotesque.  Some of these were accidentally discovered (imagine the first person who decided eating a raw oyster was a great idea!)  Take Worcestershire sauce - a sauce that was so offensive smelling became a delicious sauce after is was forgotten about and ‘aged’ in a basement for two years.

The product of interest for this cache is enjoyed throughout the world. Though it is made with a wide variety of ingredients, depending on the desired flavor profile, there are a few key chemical compounds that give each variety its distinct flavor. Scientists have enjoyed analyzing this for many years and have determined there are over 800 different chemical compounds that make up the complex flavor profile. Some of the more common compound families include the bitter profile made of alpha acids and beta acids such as Humulone - C21H30O5 and Lupulone - C26H38O4 .

There are essential oils that contribute to the flavor including beta-Caryophyllene - C15H2, Humulene - C15H24 and Myrcene - C10H16 .

Finally, there are volatile compounds called esters that also bring something to the party.  Two common esters are isoamyl acetate - C7H14O2 which lends a subtle banana aroma to foods and beverages and ethyl hexanoate - C8H16O2 providing a bit of a pineapple aroma in the background.

What is this substance?  Enter your answer into the checker in all lower case.
