Bees have been the natural inhabitants of the area for centuries. With the arrival of first humans, they learnt to extract the rich-sugared honey and process it into the highly appreciated and mouth-watering product you can see today in the top delicacy boutiques all around the area. The extraction and processing techniques our ancestors used have been passed down for generations, mostly inalterated despite the arrival of modern life technology. So much so, that our producers still transport the finished product, from “factory” to shop, on their backs. This honey makes an exceptional souvenir for those loved ones that stayed back at home; and my advice: the one produced from Kermes Oaks’ flowers is the tastiest one.
