Dodol is a sweet, toffee-like, sugar palm-based confection commonly found in Southeast Asia, Sri Lanka, and India. Originating from the culinary traditions of Indonesia, in many ways it's very similar to caramel. Gula aren, or palm sugar, a traditional sugar made from the sap of Arenga pinnata plant, is one of the main ingredients of this food. The other ingredients include rice flour, jaggery, and coconut milk. Usually, standard dodol is thick, sticky, sweet and delicious. In Burma there is a variation of dodol that is called mont kalama. Very many types of dodol can be found in Bandung's streets. For example, dodol susu, a milk-based dodol from Pangalengan, Bandung, which looks a little like a bar of chocolate. You can even find a kind of dodol made with durian, notorious for being a stinky fruit. Dodol rumput laut, yet another flavour of this confection, contains seaweed. Meanwhile Dodol nangka contains jackfruit flesh. Dodol pisang contains banana. There's some interesting things about the word dodol, if you're a word lover.
