
The Saint #25: Pina Colada

For some fun on tropical evening in Townsville why not try a Pina Colada?
Needless to say you must follow the recipe and not be inclined to add extravagant amounts of white rum. Otherwise instead of laughter with friends you could end up alone in a pool of your own dribble! Remember also that every recipe has the essential finishing ingredient of love, kindness and happiness sprinkled on top like glitter! Plus an optional wedge of pineapple for decoration.
Ingredients
120ml pineapple juice
60ml white rum
60ml coconut cream
Method
Pulse all the ingredients along with a handful of ice in a blender until smooth. Pour into a tall glass and garnish as you like. For a frozen blended version mix the juice, rum and coconut cream together and freeze in ice cube trays. Then whiz the frozen cubes (with a couple of ice cubes if you like) to a slushy consistency.
