Carl Ruiz was born in Passaic, New Jersey. He graduated from the Institute of Culinary Education in New York City. His first restaurant, Marie’s Italian Specialities, was an Italian deli and café and was featured on Guy’s Diner, Drive-Ins, and Dives. After divorcing, his wife retained the restaurant and Carl opened up a new one specializing in Cuban food, La Cubana. Carl was a recurring judge on Guy’s Grocery Games where he was known for his dislike of spicy foods. Carl died unexpectedly in 2019 at the age of 44 from atherosclerotic cardiovascular disease.
