If it's Christmas in Mexico, then it must be time for tamales. Though the traditional food is eaten year-round, tamales are absolutely mandatory during Christmastime. Traditional tamales are made with pork and beef, but each region has its own way of preparing them. For example, Tabasco fills its tamales with fish, while in Oaxaca, tamales are often served with mole negro.
