Avgolemono is Greek for “egg-lemon” and the dish is a soup that is made for Christmas Eve dinner. To prepare it, egg and lemon juice is mixed with broth and thickened. Rumor has it, it’s even better the morning after a big night of drinking, so it’s no surprise this is a holiday staple.
