PERCORSO NATURA E SVILUPPO
La Cache è all'ingresso degli "orti sociali di Tolentino". Questo grande spazio fuori dalle mura e a ridosso del fiume Chienti rappresenta attualmente un territorio agricolo del Comune affidato a tanti cittadini che utilizzano piccoli riquadri di terra per coltivare un orto. L'importanza di questo luogo e di questa attività è duplice: da un lato ci ricorda le nostre radici agricole che, solo 80 anni fa rappresentavano la stragrande maggioranza dei cittadini di questo Comune che, fuori le mura, erano pressoché tutti contadini. L'altro aspetto che va ricordato riguarda invece il nostro presente e il nostro futuro, cioè l'importanza del rapporto diretto con la produzione del cibo, conoscere la stagionalità e saper valutare la qualità dei prodotti agricoli, il significato della sovranità alimentare, la dignità del lavoro agricolo e le sue necessità.
A ridosso degli orti c'è un antico ospedaletto che è stato anche lazzaretto e luogo di riparo per i pellegrini che venivano da Roma e andavano verso Tolentino entrando da Porta Adriana. Qui passava infatti l'antica via stradale che conduceva alla città. Città che, inoltre, dentro le mura, aveva nel quartiere dei cappuccini, verso le fonti di San Giovanni, altri orti che garantivano la sopravvivenza quando per guerre, pestilenze o quant'altro, le porte del paese venivano chiuse e si sopravviveva solamente con ciò che si aveva all'interno delle mura.
Non dobbiamo dimenticare che le nostre tradizioni culinarie nascono dalla storia culturale che si intreccia inevitabilmente con quella agricola che, nelle mani e nella sapienza dei nostri vecchi, ha saputo modellare e dar vita al nostro territorio e alle nostre mense.
NATURE AND DEVELOPMENT ROUTE
Cache is at the entrance to the "social gardens of Tolentino". This large space outside the walls and close to the Chienti river currently represents an agricultural territory of the Municipality entrusted to many citizens who use small squares of land to cultivate a vegetable garden. The importance of this place and of this activity is twofold: on the one hand it reminds us of our agricultural roots which, just 80 years ago, represented the vast majority of citizens of this Municipality who, outside the walls, were almost all farmers. The other aspect that should be remembered instead concerns our present and our future, i.e. the importance of a direct relationship with the production of food, knowing the seasonality and being able to evaluate the quality of agricultural products, the meaning of food sovereignty, the dignity of agricultural work and its needs.
Behind the gardens there is an ancient hospital which was also a hospital and a place of shelter for pilgrims who came from Rome and went towards Tolentino entering from Porta Adriana. In fact, the ancient road that led to the city passed here. A city which, moreover, inside the walls, had in the Capuchin quarter, towards the sources of San Giovanni, other vegetable gardens which guaranteed survival when due to wars, plagues or whatever, the gates of the town were closed and one survived only with this that you had within the walls.
We must not forget that our culinary traditions are born from the cultural history that is inevitably intertwined with the agricultural one which, in the hands and wisdom of our elders, has been able to shape and give life to our territory and our canteens.
